Chocolate crackles always remind me of childhood. They were a staple in our house, mostly at birthday parties, and for this reason I feel a little foolish making them as an adult just for fun, and very much not for an actual child’s actual birthday party.
But hey, if being an adult means not eating kids’ birthday party foods, then I’m out, I don’t want to be an adult anymore. (For more on this I highly recommend the TV show “Miranda”).
So, why not embrace your inner child and enjoy some chocolatey goodness – goodness knows, we need a bit of fun at the moment!
Chocolate Crackles
Allow 30 mins | Makes 15-30
Ingredients
250g copha or other coconut oil, melted
4 cups Rice Bubbles
1 cup icing sugar or mixture
1 cup desiccated coconut
5 tablespoons cocoa powder
1 tablespoon Hundreds and Thousands or other sprinkles
Method
- Line 2 or 3 muffin trays with patty pans (use whatever size muffin/mini muffin tin depending on how large you want the crackles to be). Set aside.
- Mix dry ingredients together in large bowl so the cocoa is evenly dispersed.
- Stir through the oil/copha until well combined.
- Spoon the mixture into the patty pans (depending on how big patty pans are it may be anywhere between 15 and 30 crackles).
- Top with sprinkles then refrigerate the crackles until set.
