Our Favourite Chocolate Cake

When I was younger, my mum would call this the “borer” cake, because if you made it a certain way, it would look like borers had been living in it…that sounds awful doesn’t it? But I just mean that it was a really dense cake with all these holes in it! But the funny thing is that depending on how you make this cake, you’ll get completely different results. So if you want the seriously dense cake, use a wooden spoon. But if you want a still-dense-but-not-quite-so-crazily-dense cake, use a whisk!


But anyway, here’s the recipe:



125g butter

1tbsp instant coffee

1 1/2 cups boiling water

200g dark chocolate

1 1/2 cups self-raising flour

2 eggs at room temperature

2 tsp vanilla essence

1 cup caster sugar


  1. Melt butter in the microwave and add the coffee and hot water
  2. add chopped chocolate and the sugar, stir until all the chocolate has melted and the mixture is smooth
  3. Add eggs, then vanilla and flour beating it until it’s smooth
  4. Pour into a lined 20-22cm tin and bake at 150C for about an hour.

I made this cake for an informal birthday cake and was concerned that it was too dense, I thought I’d stuffed up the plain flour/baking powder ratio, but it was a big hit with dessert lovers and non-dessert lovers alike! Topped it with fresh raspberries and served it slightly warm (because I was pressed for time).
